Help with learning digital music making

I used to work with soundfonts and harpsichord samples, which are very, very simple.

But now I'm having problems with melody instruments like winds and strings, I can't just load a midi file into the DAW and expect to produce the same results with these samples.

Which tutorial is the most concise and comprehensive on the basic mechanics of the sequencers and their libraries?
