5.1: extracting tracks and downmixing SOME

So I got this album from a band that plays death metal with symphonic elements (played by the Philharmonic Orchestra of Prague - it's Septic Flesh) and the bonus DVD comes with a 5.1 mix. I extracted the tracks as wav files with dvd audio extractor (by the way, is there anything better to do this?) and I want to downmix the tracks that correspond to the orquestra (which are 4, out of 6). Should I pan them all to center and just bounce it or is there any program to check how they where mixed on the DVD?
